Ingredients
3 tablespoons avocado oil or light olive oil
3 tablespoons all purpose flour
2 tablespoons tomato paste
2 cups chicken broth
1/2 teaspoon distilled white vinegar
Seasonings
1 tablespoon ground chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
¼ teaspoon dried oregano (can omit)
¼ teaspoon salt, to taste
Freshly ground black pepper, to taste
Preparation
Mise en place (have all your ingredients measured prior to beginning to cook).
Measure flour and all ingredients listed under seasonings into a bowl. Mix and set near the stove.
Measure tomato paste and keep near stove.
Measure out broth and keep near stove.
Heat oil in a medium sized pot over medium heat.
Once flour dances when sprinkled in oil, add flour and seasoning mixture. Mix constantly for about 1 minute until fragrant and toasted.
Add tomato paste, whisk, and cook for 1 minute longer.
Add broth and whisk until smooth.
Cook over medium high heat, constantly stirring, for about 5 minutes until thickened.
Remove from heat and add vinegar.
Allow to cool before storing or using.
