About the Recipe

Bursting with rich, robust flavors and crafted from simple, wholesome ingredients, this sauce is the secret weapon that will elevate your Mexican-inspired dishes to new heights.

Ingredients

  • 3 tablespoons avocado oil or light olive oil

  • 3 tablespoons all purpose flour

  • 2 tablespoons tomato paste

  • 2 cups chicken broth

  • 1/2 teaspoon distilled white vinegar

Seasonings

  • 1 tablespoon ground chili powder

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder

  • ¼ teaspoon dried oregano (can omit)

  • ¼ teaspoon salt, to taste

  • Freshly ground black pepper, to taste

Preparation

Mise en place (have all your ingredients measured prior to beginning to cook).


  1. Measure flour and all ingredients listed under seasonings into a bowl. Mix and set near the stove.

  2. Measure tomato paste and keep near stove.

  3. Measure out broth and keep near stove.

  4. Heat oil in a medium sized pot over medium heat.

  5. Once flour dances when sprinkled in oil, add flour and seasoning mixture. Mix constantly for about 1 minute until fragrant and toasted.

  6. Add tomato paste, whisk, and cook for 1 minute longer.

  7. Add broth and whisk until smooth.

  8. Cook over medium high heat, constantly stirring, for about 5 minutes until thickened.

  9. Remove from heat and add vinegar.

  10. Allow to cool before storing or using.
